In this work we present experimental results of a sequential biological treatment of yeast industry effluents. These effluents are composed by two equal streams originated in the centrifugation stage (vinasse and cream washing). The sequential system consisted of a dissolved air flotation, as a primary treatment, followed by an UASB anaerobic reactor and a final polishing lagoon. It was found that the dissolved air flotation removed up to 60% of fatty compounds present in the effluent. Addition of FeCL(3) sol. allowed to drive out more than 95% of anion sulfates. When the organic loading of the UASB reactor increased from 0.3 to 10 Kg COD/m(3).d it was obtained. 50 to 70% COD removal. It was possible to operate the UASB reactor with a pH kept constant among 6.5-7.5. The AGV/alkalinity ratio remained less than 0.3 and the alkalinity ranged from 1800 to 2800 mg CaCO3/L. A 29% average removal of COD was obtained in the polishing lagoon. Finally, the sequential system showed of 70% COD and 95% degradation of BOD.#En este trabajo presentamos resultados experimentales de un tratamiento biológico secuencial de efluentes de la industria de la levadura. Estos efluentes están compuestos por dos corrientes iguales originadas en la etapa de centrifugación (vinaza y lavado de crema). El sistema secuencial consistió en una flotación por aire disuelto, como tratamiento primario, seguida de un reactor anaeróbico UASB y una laguna de pulido final. Se encontró que la flotación por aire disuelto eliminó hasta el 60% de los compuestos grasos presentes en el efluente. La adición de FeCl(3) sol. permitió eliminar más del 95% de los sulfatos aniónicos. Cuando la carga orgánica del reactor UASB aumentó de 0,3 a 10 Kg DQO/m(3).d se obtuvo. 50 a 70% de eliminación de DQO. Fue posible operar el reactor UASB con un pH mantenido constante entre 6,5-7,5. La relación AGV/alcalinidad se mantuvo por debajo de 0,3 y la alcalinidad osciló entre 1800 y 2800 mg CaCO3/L. Se obtuvo una eliminación promedio del 29 % de DQO en la laguna de pulido. Finalmente, el sistema secuencial mostró una degradación del 70 % de DQO y del 95 % de DBO.
